That does sound more like why... It looked like the inital procedures which Sierra was going through in the first episode had the candidate awake/aware (perhaps it's needed in the inital character mapping/wiping). To get a person to go through that painful experience would be hard without their agreement. Like you said, they would feel safe in doing it after signing an agreement which should bind both sides.

I agree that often someone older can be more attractive than someone youth and beauty. There's alot to be said for the attraction of experience. Interesting thoughts, opinions all born of simply living, gaining knowledge and security in your self opinion as you age. But I also think that the people who buy the dolls for this purpose probably aren't necessarily deep enough to see this. Even if they do want an interesting personality added within, the clients are shallow enough to pay for a day or two with 'the perfect' woman I find it hard to grant them the character needed to not want someone at the height of accepted beauty, ie young.
I suppose it was implied that the first engagement we saw Echo on was more than just a fun weekend to the boy... but... yeah. I'm cynical.

I think I need to find the original pilot so I can properly obsess over this show ;) (not that I need much help).
The technology seems pretty new
I'd say that yes, the full blown ability to wipe minds and insert new personalities must be relatively new. But all things have to develop from somewhere. Something like this would likely start with the sort of subliminal changes we've been talking about. Little additions not far enough outside the original character to be that noticeable but that might push someone to make odd decisions. Then they'd try to force too much in, too many impulses and find there isn't room. So they learn to wipe the mind, giving them that blank canvas. From that they need to relearn how to add the personalities. They can't just add thoughts, impulses. It has to be a full blown life that they add, so they learn how to meld them together and likely discover that, like has been said, you can't be perfect in one way without adding limitations in others. Discover that the personality degrades after time.
Anyway... I accept that they wouldn't have had many 'ex-dolls' to do anything with if Alpha was the first they really succeeded with, perhaps the dull staff of the house are primarily failed attempts, who no longer have the capacity to take a normal personality after whatever they did to their brains. But in the development of the technology they would have more than adequate time to figure out what to do with their cast offs.

I can see that... him being an expert in manipulating the technology. a background in AI or something and this oddly unique ability Adelle (or whoever does the hiring) has of finding people with just the right degree of morals.
There could be Dollhouse Tokyo Drift, and Dollhouse London, and Dollhouse Paris
The only problem would be having enough millionaires to buy them all over the world. Plus with the current world climate it's debatable how much use having more would be. All the company needs is a private jet and it can transport the doll wherever it needs to be.
Of course since Alpha was the first, they could still be planning their expansion to other markets. It can't be easy to set up illegal corporations... finding a whole new batch of amoral staff.
